A glass of Tiramisú



(segue italiano)

Winter, still winter. Not that I am obsessed about the weather but this grey sky, low temperature and light rain -in June- is really devastating my mood. Sometimes I wish I could really go back home to see the deep blue sky and back….with a Star Trek transporter.

So I thought to make something to feel home somehow, something I eat almost every time I return home (a speciality in my family!) and I will never get tired of eating….something that as its name says it is able to rise the mood… a simple Tiramisú.



Ingredients for about 6 glasses:

250g Mascarpone cheese
1 packet of Savoiardi biscuits (sponge fingers)
4 tablespoons caster sugar
2 tablespoons Marsala (or other brandy)
4 eggs (separated, 4 yolks and 3 whites)
50ml water
Bitter cocoa powder
chocolate chopped
about 100ml coffee

For the cream:

1) Beat in a bowl the egg yolks. Bring water and sugar to 120ºC than add this syrup to the egg yolks and stir energetically with a hand-whisk (you don't want to make an omelet at this point!)

2) Whisk the mascarpone cheese until softer. Add it to the eggs mixture and beat well together to soft peaks.

3) In a separated bowl, with an electric hand mixer, beat egg whites to firm peaks. Add the Marsala.
Using a spatula, gently fold the egg whites into the egg yolk-mascarpone mixture. 

Assembly:

Pour coffee into a dish and add the Marsala. Dip the biscuits into the coffee (they have to remain hard). Cover with biscuits the bottom of the glass, then add a layer of mascarpone mixture, and chocolate chopped. Repeat layer 2 times ending with the cream. Than cover with plastic wrap and refrigerate at least 2h. Dust with cocoa powder before serving.


Un bicchiere per Tira(r)misú



Qui é ancora inverno. Non che io sia ossessionata dal tempo ma questo cielo grigio, aria fredda  e pioggerella (tanto per dar fastidio) -a Giugno- mi mandano a pezzi l'umore. In questi momenti desidererei potermi tele-trasportare a casa a vedere il cielo azzurro e back….con quella bella macchina che usavano nel mitico Star Treck!  

Un Tiramisú fa casa, almeno per me, dal momento che é il dolce che accompagna quasi ogni mio ritorno .....il dolce che sono certa non mi stancheró mai di mangiare ..... il campione di sollevamento umore!
Non sto qui a darvi la ricetta, ognuno di voi avrá giá la sua collaudatissima ricetta; facciamo che la scrivo per me, in effetti se ci penso é l'unica che ricordo mnemonicamente e non l'ho mai scritta da nessuna parte!

Ingredienti per circa 6 bicchieri:

250g Mascarpone 
1 pacco di Savoiardi 
4 cucchiai di zucchero
2 cucchiai di Marsala
4 uova (separate, 4 tuorli e 3 albumi)
Cacao amaro in polvere
cioccolato a pezzetti
50ml Acqua
circa 100ml di caffé

Per la crema:


1) Sbattete i tuorli in una ciotola. 
A questo punto, si possono usare le uova non pastorizzate, ma se non volete correre rischi mangiando le uova crude, e non trovate uova giá pastorizzate un metodo approssimativo da utilizzare in casa é di portare ad ebollizione l'acqua e lo zucchero fino a circa 120 gradi e poi versare lo sciroppo ottenuto sulle uova mescolando energicamente (altrimenti otterrete una frittata)

2) Ammorbidire il mascarpone con una frusta ed unirlo ai tuorli (io monto il tutto con le fruste elettriche)

3) Montare gli albumi a neve e con una spatula incorporarli delicatamente al composto mascarpone-uova con movimenti dal basso verso l'alto.

Assemblaggio

Versare in un piatto caffé e marsala, imbevervi leggermente i savoiardi ed adagiarli sul fondo dei bicchieri. Cospargere di crema e cioccolato a pezzetti. Fare un secondo strato concludendo con il mascarpone. Coprire con pellicola e lasciar riposare in frigo per almeno 2h. Cospargere di cacao amaro prima di servire.
