Cheesecake with Strawberries topping for a sweet Welcome!

It’s summer time...almost, today it’s raining again, an autumnal rain.
But it’s definitively strawberries time! So, what could be better than eating a creamy cheesecake topped with strawberries and whipped cream? A way to say ‘Hallo Summer’ Come back soon, please!



Ingredients
For the dough:
200g flour
1/2 teaspoon baking powder
50g icing sugar
1 egg M
100g butter
For the filling:
750g cream cheese (quark 20%)
130g sugar
3 tablespoons lemon juice
50g starch
3 egg yolks
3 egg whites
100g double cream 
For the strawberries topping
300g  fresh strawberries
50g icing sugar
3 tablespoons lemon juice.
1 small package strawberry jello 
1) Preheat the oven to 180°C(fan)/350°F  Grease a 24-26 cm cake tin. Sift flour and baking powder into a bowl. Add the icing sugar, egg and butter. Whisk until mixed. Roll 2/3rds of the pastry on the tin (it is easier removing the bottom). Put the rest in the fridge. Bake for 10 mins. Remove from oven and allow to cool.
2) Turn oven down to 140°C(fan). Whisk together the cheese, sugar, juice, yolks and starch in a large bowl. Beat the egg whites and the double cream  until stiff. Incorporate to the cheese mixer, slowly. Roll out the remaining 1/3rd of dough to form a roll to cover the entire edge of the tin, flat it to an height of about 3 cm. Fill it with the cheese cream. Bake for 80min until center is softly set and edges begin to color. Allow to cool (at least 3h).
3) Clean and slice strawberries, add icing sugar and lemon juice. Leave 30 mins.
Collect the strawberry's juice and bring to 250ml with apple juice. Bring to boil. Remove from heat and had strawberry jello mix. Stir until jello is completely dissolved. Arrange strawberries on top of the cake and pour jelly mixture over it. Top with whipped cream and a sprig of mint for serving.






Cheesecake con fragole per un dolce Benvenuto!

L’estate é arrivata....beh, quasi visto che oggi a Berlino piove e sembra Autunno. Ma é certamente tempo di fragole e cosí....cosa c’é di meglio di una bella fetta di cheesecake con fragole e panna? ....aspettando che torni l’estate...

Per la base:
200g farina1/2 cucchiaino di lievito
50g zucchero a velo
1 uovo M
100g burro

Per il ripieno:

750g Quark 20% (o Philadelphia)
130g zucchero
3 cucchiai succo di limone
50g Maizena3 tuorli
3 albumi
100g panna

Per la copertura di fragole:

300g fragole
50g zucchero a velo
3 cucchiai succo di limone
1 cucchiaio menta a pezzetti
1 bustina di gelatina per torta

1) Accendere il forno a 180°C(ventilato). Imburrare una tortiera a cerniera da 24-26cm. Setacciare in una pirofila farina e lievito, unire zucchero a velo, uovo e burro. Mescolare con le fruste elettriche partendo da una velocita’ bassa. Fare una palla e stenderne i due terzi sul fondo della tortiera (e’ piu’ facile togliendo il fondo e aiutandosi col matterello) Mettere il resto in frigo. Infornare 10 min. Sfornare e far raffreddare.


2) Abbassare la temp. del forno a 140°C. Mescolare con le fruste elettriche il quark con lo zucchero, il succo di limone, la maizena ed i tuorli. Montare gli  albumi e la panna a neve ferma e mischiare insieme (forse si possono montare insieme, non ho provato!). Incorporare entrambi al composto al formaggio, lentamente. Stendere la pasta restante (con un po’ di farina) formando un rotolo, appiattirlo e ricoprire tutto il bordo della teglia ad una altezza di circa 3cm. Versarvi la crema ed infornare per 80 min. Sfornare e far raffreddare.

3) Lavare le fragole, farle asciugare e tagliare a fette. Aggiungere il succo di limone e lo zucchero a velo. Lasciare a macerare 30min. Poi raccogliere il succo, portare a 250ml con succo di mela. Con questo sciogliere la gelatina per torta secondo le istruzioni riportate sulla confezione. Cospargere la torta di fragole e versarvi la gelatina. Riporre in frigo per almeno 3h. Servire con panna e qualche pezzetto di menta fresca.

  2. ......allora...... :))))) ti dicevo ke lo avrei provato presto...bene...lo faccio domani...solo ke farò una modifica...al posto delle fragole voglio provarlo con i kiwi!!!! :)))) ma dimmi un pò come formaggio secondo te il philadelphia potrebbe andare?

  3. Grazie, ho tante ricette cosi' buone che sarebbe stato un peccato non condividerle! Provala, il risultato e' assicurato.
    Io la cheesecake in genere la faccio con il Quark visto che qui' si trova facilmente, ma il Philadelphia va benissimo, qui ne trovo tanti tipi, io proverei un mix tra quello 'light' e quello intero (50:50). Il kiwi e' meno dolce delle fragole non so come sara' il gusto finale, fammi sapere!

  7. O.O wow!! non vedo l'ora che arrivino le fragole (si obbiettivamente manca ancora un po' :/ ) per fare questa meraviglia!
    Mia sorella continua a chiedermi una cheesecake, ma fin ora non ho mai provato...le presenterò questa un giorno :D non vedo l'ora!
