Vellutata di zucchine gialle con grano - Yellow zucchini soup with wheat

Settimana di febbre e raffreddore, freddo e cielo grigio. Cosí quando ho visto  che il fruttivendolo aveva questa varietà di zucchine di un bel colore giallo intenso non ho saputo resistere, immaginando subito di utilizzarle in una confortante zuppetta di un bel colore solare! C'é da dire che le zucchine sono nella top tre dei miei vegetali preferiti, come potete constatare anche dalla frequenza con cui appaiono nei miei post! La consistenza delle zucchine gialle é essenzialmente uguale a quella delle verdi, il sapore é direi più dolce e delicato, un pó simile forse a quello della zucca, ma se non le avete ancora provate non aspettatevi chissà che differenza!...sicuramente però offrono un tocco di colore e originalità! Appena le trovo nuovamente, mi riprometto di utilizzarle per il mio plum-cake dolce di zucchine del post precedente, credo che con questa varietà di zucchine potrà venire ancora più buono!

Ingredienti per 2-3 porzioni:
400g zucchine gialle
1 porro 
1 cipolla
500ml di acqua
1 cucchiaino di dado vegetale
1/2 cucchiaino di zenzero in polvere 
125g grano (es. Ebly) 
ricotta salata o altro formaggio a pasta dura q.b
panna (1 cucchiaio per piatto) 
sale & pepe q.b
2 cucchiai olio EVO
semini tostati q.b



1. Pulire le zucchine e tagliarle a cubetti. Tagliare la cipolla ed il porro e farli soffriggere in poco olio a fiamma bassa in un tegame. Appena saranno appassiti, aggiungere le zucchine a cubetti, e farle scottare a fuoco medio per qualche minuto.
2. Versare nel tegame l'acqua ed il dado, mescolare e portare a bollore. Mettere il coperchio e far cuocere le zucchine a fuoco medio-basso finché morbide (10-15 minuti). 
3. Nel frattempo preparare il grano come indicato sulla confezione, scolarlo bene e tenerlo da parte
3. Appena saranno cotte, frullare le zucchine con un frullatore ad immersione direttamente nel tegame, aggiungere lo zenzero ed aggiustare di sale e pepe.
4. Dividere la vellutata in 2-3 piatti, aggiungere a ciascuno un cucchiaio di panna, il grano in parti uguali e spolverare a piacere con ricotta salata o altro formaggio a pasta dura ed i semini tostati. Servire calda.



Yellow zucchini soup with wheat


Week of fever and cold, cold weather and gray sky. So when I saw that the greengrocer had that variety of beautiful intense yellow zucchini, I could not resist to buy them, imagining to use them in a comforting soup of a nice sunny color! It must be said that the zucchini are within the top three of my favorite vegetable, as you can see by the frequency with which they appear in my posts! The consistency of the yellow zucchini is essentially the same as the green ones, though I would say the flavor is sweeter and more delicate, with some similarities to pumpkin, but if you have not tried them yet do not expect such a big difference! ... However they certainly offer a touch of color and originality! As soon as I find them again, I plan to use them for my zucchini cake posted previously, I believe that with this variety of zucchini can be even better! 




Ingredients for 2-3 servings: 
400g yellow zucchini 
1 leek, chopped 
1 onion, chopped
500ml of water 
1 teaspoon vegetable stock cube 
1/2 teaspoon powdered ginger 
125g wheat (eg Ebly) 
grated hard cheese to taste
double cream (1 tablespoon per dish) 
salt & pepper t.t
2 tablespoons extra virgin olive oil 
roasted seeds t.t


1. Clean and dice the zucchini. Heat  the olive oil in a pot over medium heat, add onion and leek and saute until tender. Add the diced zucchini and blanch them over medium heat for a few minutes. 
2. Pour the water into the pot, add the stock cubes, stir well and bring to the boil. Put the lid on and simmer the zucchini over medium heat until soft (10-15 minutes).
3. Meanwhile, prepare the wheat as directed on package, drain it well and set aside
3. When cooked, puree the zucchini with an immersion blender directly in the pot, until smooth and creamy, add the ginger and season with salt and pepper.
4. Divide the soup into 2-3 dishes, add a tablespoon of double cream to each, the barley in equal parts and sprinkle with grated hard cheese and toasted seeds. Serve hot.

  1. Le avevo già viste le zucchine gialle! In Polonia si usano molto, purtroppo qui non le ho ancora trovate! Bellissima la tua vellutata :)

  6. Le zucchine gialle non le ho mai viste ma adoro le zucchine normali. Questa zuppa sono certa che sarebbe anche di mio gusto. Mi spiace per il tuo raffreddore, come va adesso?
