Lasagne con Zucca e Salmone...ed, il silenzio delle piante - Pumpkin and Salmon Lasagne...and, the silence of plants

Adoro il cambio delle stagioni. Il godimento pittoresco della natura. La mestizia silenziosa degli alberi che si spogliano. Saggezza che muta, svelandoci la legge primordiale della vita. Radici, foglie accartocciate, terra. 

Questo per me é anche il periodo del leggere poesie, ne ho letta proprio ieri una bellissima, di una delle mie poetesse preferite W. Szymborska, dal libro la gioia di scrivere, Il silenzio delle piante:


Ed ora, visto che finalmente il weekend é alle porte, vi lascio una ricetta festosa, di quelle da pranzo domenicale in famiglia, con la regina degli ingredienti di questa stagione, la zucca! Io la adoro, e voi?

Ingredienti per 6 persone:
circa 200-250g lasagne (io ne ho usate metà agli spinaci)
800g di polpa di zucca (Hokkaido o Butternuts)
1 cipolla
1litro besciamella (vedi ricetta sotto)
150g di salmone affumicato, tagliato a pezzetti
80g parmigiano grattugiato
una manciata di pinoli
olio evo q.b

Per la besciamella: 
1 litro di latte
80g di burro
80g farina
sale e pepe q.b
noce moscata q.b
erbette tritate q.b


1. Lavare la zucca e privarla dei semi, poi tagliarla a pezzetti (con la buccia).
Versare due cucchiai di olio d'oliva in una pentola e farvi appassire la cipolla tagliata, poi aggiungere i pezzetti di zucca e far arrostire qualche minuto.
2. Aggiungere circa 100ml di acqua, coprire, e far cuocere la zucca finché soffice (circa 10 min). 
3. Nel frattempo preparare la besciamella: far sciogliere in un pentolino 80g di burro, tenerlo un paio di minuti dopo che si é sciolto per far evaporare l'acqua rilasciata. Aggiungere in un sol colpo 80g di farina e mescolare con una frusta a mano per farla bene incorporare al burro. Far cuocere per un paio di minuti, continuando a mescolare, finché il composto diventerá piü morbido. Togliere il pentolino dal fuoco ed aggiungere 1 litro di latte, freddo o a temp. ambiente mescolando bene il tutto (sia con le fruste che con una spatola per arrivare ai bordi del pentolino) per far sciogliere i grumi. Rimettere sul fuoco e far addensare. Salare e pepare a piacere ed aggiungere una bella manciata di noce moscata e di erbette a piacere, tritate. 

4. Quando la zucca é pronta, aggiungerne i 3/4 alla besciamella e con un minipimer frullare bene il tutto (per ottenere una besciamella alla zucca). 
5. Assemblare la lasagna: Adagiare sul fondo di una pirofila (circa 20x30) le lasagne sovrapponendole leggermente, mettere uno strato di besciamella alla zucca, cospargere i pezzi di salmone sopra, adagiare un altro strato di lasagne, mettere un altro strato di besciamella alla zucca, cospargere con i pezzetti di zucca messi da parte, adagiare un ultimo strato di lasagne, mettere sopra la besciamella, cospargere con il parmigiano, gli ultimi pezzetti di zucca ed i pinoli. Coprire la pirofila con un foglio di alluminio ed infornare a 180 gradi per circa 30 min, gli ultimi 10-15 minuti togliere il foglio per far gratinare leggermente la superficie.  


Pumpkin and Salmon Lasagne



I love the changing of the seasons. The enjoyment of the picturesque nature. The silent melancholy of the trees getting naked. Wisdom that changes, revealing the primordial law of life. Roots, curled leaves, earth.

This to me is also the period of reading poems, I read just yesterday a beautiful one, from one of my favorite poets W. Szymborska, from the book, the joy of writing:
The Silence of Plants 
A one-sided relationship is developing quite well between you and me.
I know what a leaf, petal, kernel, cone, and stem are,
and I know what happens to you in April and December.
 
Though my curiosity is unrequited,
I gladly stoop for some of you,
and for others I crane my neck.
 
I have names for you:
maple, burdock, liverwort,
eather, juniper, mistletoe, and forget-me-not;
but you have none for me.
 
After all, we share a common journey.
When traveling together, it's normal to talk,
exchanging remarks, say, about the weather,
or about the stations flashing past.
 
We wouldn't run out of topics
for so much connects us.
The same star keeps us in reach.
We cast shadows according to the same laws.
 
Both of us at least try to know something,
each in our own way,
and even in what we don't know
there lies a resemblance.
 
Just ask and I will explain as best I can:
what it is to see through my eyes,
why my heart beats,
and how come my body is unrooted.
 
But how does someone answer questions
which have never been posed,
and when, on top of that
the one who would answer
is such an utter nobody to you?
 
Undergrowth, shrubbery,
meadows, and rushes…
everything I say to you is a monologue,
and it is not you who's listening.
 
A conversation with you is necessary
and impossible,
urgent in a hurried life
and postponed for never.

And now, since the weekend is finally arriving, I leave you a convivial recipe, those for a Sunday lunch with the family, with the queen of the ingredients of this season, the pumpkin! I love it, and you?


Ingredients for 6 people: 
about 200-250g lasagne sheets 
800g pumpkin flesh (Hokkaido or Butternuts) 
1 onion, chopped
1 liter italian besciamella sauce (see recipe below) 
150g smoked salmon, cutted into pieces 
80g grated Parmesan cheese 
a handful of pine nuts 
extra virgin olive oil q.b 

For the besciamella sauce (Béchamel Sauce): 
1 liter of milk 
80g of butter 
80g flour 
salt and pepper t.t
nutmeg t.t
chopped herbs t.t

1. Wash the pumpkin and deprive it of fibers and seeds, then cut into small pieces (with the peel). 
Pour  in a pot two tablespoons of olive oil and saute the chopped onion, then add the chopped pumpkin and let it roast a few minutes. 
2. Add about 100ml water, cover, and cook the pumpkin until soft (about 10 min). 
3. Meanwhile, prepare the besciamella sauce: Melt 80g of butter in a saucepan,  after it is melted, keep going a couple of minutes to evaporate the water released. Add in one step 80g of flour and mix with a hand whisk to incorporate it well to the butter. Cook for a couple of minutes, stirring constantly, until the mixture becomes softet. Remove the pan from the heat and add 1 liter of milk, cold or at room temp. , mix everything well, both with a whisk and then with a spatula to dissolve clots. Put back on low heat and simmer until it thickens. Season with salt and pepper and add a handful of herbs and nutmeg to taste.
4. When the pumpkin is ready, add 3/4 of it to the sauce and blend thoroughly. 
5. Assemble the lasagna: Put on the bottom of a baking dish (about 20x30) the lasagna sheets slightly overlapping, spread a layer of sauce on top, sprinkle the salmon pieces over, place another layer of lasagna, spread another layer of sauce, sprinkle with the chopped pumpkin, lay down a final layer of lasagna, spread with the sauce, sprinkle with the Parmesan cheese, the last pieces of pumpkin and pine nuts. Cover the baking dish with aluminum foil and bake at 180 degrees for about 30 min, the last 10-15 minutes remove foil and golden the surface

  5. Non avrei mai pensato di abbinare la zucca col salmone.ho comprato una zucca propruo ieri....e tengo sempre in frigo del salmone affumicato....mi mancano solo le lasagne.le compreró .mi viene l'acquolina alla sola vista della foto
