Un trenino semplice ma carico di auguri... - Easy train cake

(scroll down for the english recipe)

Train cake

I made this train cake decorated with fondant at the last minute for a kindergarten friend of my daughter. I did not have the time to prepare a 3D train, nevertheless I wanted to use the fondant to create a cheerful cake with a subject that he likes very much! ... Simple but effective!

And so, here is a train load of wishes for Altan!

The cake is a Greek-yogurt-based sponge cake filled with a double layer of custard at vanilla and nutella taste. To avoid that the creams could dampen the fondant outside, I used small pieces of the sponge cake itself to create a small fence around the creams. I obtained  these small pieces by cutting the top of the cake to level it. As you can see in the photo above, the cream layers do not reach the outer edge. Then I covered the whole structure with a thin layer of butter cream.

Custard (Italian Crema Pasticciera)
400 ml milk
100 ml liquid cream
5 egg yolks
150g sugar
35g corn starch
1/2 vanilla bean

1. Boil in a thick-bottomed saucepan milk and cream with the addition of the vanilla seeds
2. Meanwhile, in a bowl, whip the egg yolks with the sugar and then incorporate the sifted cornstarch.
3. As soon as the milk boils, pour half of it onto the egg yolks, stirring constantly with a whisk.
4 Pour this mixture into the remaining milk and put the pot on the fire.
5. thicken, stirring constantly with a whisk.

When ready divide the custard into two bowls. Cover the first immediately with plastic wrap (in contact with the cream), and add to the other half 3 tablespoons of Nutella, mix well. Cover with plastic wrap to touch and let it  the cream, cool thoroughly before filling the cake.
