Conchiglie alla crema di zucchine, semi e pinoli tostati

Rientro oggi da un weekend in Italia ….ossia da 48 ore di fuoco….e solo ora capisco perché negli ultimi post dei blogger italiani l'uso del forno é stato già bandito!….Qui invece a poco non bisogna accendere i riscaldamenti visto che il termometro non ne vuol sapere di superare i 15 gradi!
Cosí….per i nostalgici del fresco autunnale…..o per chi volesse fuggire dal caldo beduino l'opzione Germania al momento é la piú azzeccata ;-)….e non dimenticate l'ombrello!
La ricetta di oggi é una pasta semplice e gustosa adatta a tutte le stagioni!

Ingredienti per 4
Conchiglie 
2 Zucchine grandi
1 cipolla
300ml brodo vegetale
3 cucchiai semi vari (zucca, girasole...) tostati
3 cucchiai pinoli tostati
1 cucchiaio prezzemolo
3 cucchiai panna (30 %)
Sale, Pepe, Noce moscata

1) Pulire le zucchine e tagliarle a dadi. Affettare la cipolla e soffriggerla in padella con un filo d'olio, poi unire le zucchine a dadi e soffriggerle per 5 minuti. Cospargere con il brodo vegetale e far bollire circa 15 minuti con il coperchio. 

2) Frullare con il frullatore ad immersione le zucchine, aggiungere la panna, un pizzico di noce moscata ed aggiustare di sale e pepe.

3) Scolare la pasta al dente e ripassarla in padella nella salsa ottenuta. Versarla nei piatti e ricoprire con il prezzemolo tritato, i pinoli ed i semini.

Conchiglie pasta with zucchini cream, seeds and toasted pine nuts


I returned today from a weekend in Italy….namely 48 hours of fire…..and only now I understand why in the last posts of Italian food blogger the use of the oven is banned!….Conversely here we almost have to turn the heating on since the thermometer does not go over 15 degrees! So, for those nostalgic for the cool autumn….or those wishing to escape the Bedouin heat, Germany is the right option ;-)….and do not forget the umbrella!

Today's recipe is a simple and tasty pasta suitable for all seasons!

Ingredients for 4:
400g Conchiglie Pasta
2 big zucchini
1 onion
300 ml vegetable stock
3 Tablespoons seeds (pumpkin, sunflower…) toasted
3 tablespoons toasted pine nuts
1 tablespoon chopped parsley
3 tablespoons cream (30%)
Salt, Pepper, Nutmeg

1) Clean the zucchini and cut into cubes. Sauté the onion in a pan with olive oil until translucent, then add the cubed zucchini and sauté about 5 minutes. Sprinkle with the broth and simmer about 15 minutes with the lid until zucchini are tender.

2) Blend the zucchini until smooth than add the cream, a pinch of nutmeg and season with salt and pepper.

3) Cook the pasta "al dente" , drain and toss it into the pan with the sauce. Serve topped with chopped parsley, pine nuts and seeds.

  3. il caldo africano ke c'è qui non mi fa venire manco voglia di avvicinarmi alla cucina ma quedti conkiglioni sono trooooppo appetitosiiiii mmmmmm mi sa ke te li rubo per una cena ke avrò fra qualke giorno :)

    1. Hallo Yuliya, I am happy you tried it and that was good. I did not make risotto lately, but I plan to make it in the next days. Here it is raining a lot and I saw there are tasty mushrooms at the market.....a mushroom risotto is probably coming soon! ;) ...follow me! Hugs.
