Kokos-Makronen con frutta e miele (con albumi) - Coconut macaroons with fruit and honey

Quanto tempo é passato dal mio ultimo post! Le giornate in quest'ultimo mese di Dicembre sono volate via ancor più velocemente del solito! Abbiamo avuto visite dall'Italia, e sono stata tantissimo all'aperto a girare per Berlino; qui continuano a susseguirsi belle giornate, é un inverno mite, il piú mite da quando vivo in questa città ed é un piacere stare all'aperto. Per la prima volta sono riuscita a passeggiare tra le bancarelle dei mercatini natalizi senza desiderare di rifugiarmi subito in un negozio ben riscaldato!!! Quest'anno ho partecipato ad un piccolo mercatino natalizio di un pomeriggio e per l'occasione, ho sfornato tantissimi biscotti. Nelle innumerevoli preparazione di frolle e biscotti vari per questo periodo di festa, avanzano spesso degli albumi, e se come me non amate molto le semplici meringhe e non avete tempo per cimentarvi nella preparazione dei mitici ma laboriosi macarons, oggi vi propongo la ricetta di questi dolcetti con albumi molto buoni e soprattutto, nella frenesia di questi ultimi giorni prima del Natale rapidi da preparare ... 


da aggiungere magari ai regalini mangerecci per familiari e conoscenti :)

Ingredienti per circa 25-30 pezzi:
2 albumi (M)
70g zucchero
70g miele 
200g farina di cocco
50g burro
50g albicocche secche (o altra frutta che vi piace)
3 cucchiai di cranberries secchi

1. Preriscaldare il forno a 170 gradi statico (o 150 gradi ventilato). Tagliare le albicocche secche a pezzetti. Sciogliere il burro al microonde e farlo raffreddare. 
2. Montare gli albumi a neve ferma aggiungendo lo zucchero ed il miele poco alla volta. Poi incorporare con una spatola la farina di cocco, il burro e tutta la frutta secca. 
3. Formare su una placca rivestita di carta forno, 25-30 mucchietti, con l'aiuto di due cucchiai. Infornare per circa 12 minuti. Sfornare e far raffreddare completamente.

How long has passed since my last post! The days in the last month of December are blown away even more quickly than usual! We had visitors from Italy, and we have been wandering a lot around in Berlin; here it is a mild winter, the most mild since I live in this city. For the first time I was able to stroll among the stalls of the Christmas markets without wanting to immediately take refuge in a well heated shop! This year I participated in a small Christmas market that took place for one afternoon and for the occasion, I baked lots of cookies. In the numerous preparation of shortbread and varied cookies for this holiday season, egg yolks are often left over, so, if you also do not love the classical meringue and do not have time to try to make the preparation of the mythical but laborious french macarons, I propose you the recipe of these delicious coconuts macaroons with dried fruit and honey, crunchy on the outside and chewy in the middle. Really easy and fast to make in these last frenetic days before Christmas day!

Ingredients for approximately 25-30 cookies:
2 egg whites (M)
70g sugar
70g honey
200g coconut flour
50g butter
50g dried apricots (or other fruit you like)
3 tablespoons dried cranberries

1. Preheat oven to 170 degrees static (or 150 degrees ventilated). Cut the dried apricots into pieces. Melt the butter in the microwave and let it cool.
2. Beat the egg whites until stiff and glossy adding the sugar and the honey a little at a time. Then with a silicon spatula incorporate the coconut flour, the melted butter and the fruits, until well combined.
3. Drop the batter, in 25-30 portions with the help of two spoons, on a baking sheet lined with parchment paper and bake for about 12 minutes or until golden. Remove from the oven and allow to cool completely.

  4. Adoro i mercatini di Natale tedeschi e so bene che freddo c'è, ma l'atmosfera è davvero bellissima. Berlino però mi manca anche sotto questo aspettoi, dovrò rimediare! E se poi ci sono anche queste delizie, non c'è più scusa che tenga.
