Barchette di zucchine ripiene con quinoa e tonno - Stuffed zucchini boats with quinoa and tuna

Ci tengo a pubblicare questa ricetta oggi, perché temo che sarà l'ultima cosa sana che mangeró per qualche giorno! Dedicheró infatti ogni minuto libero della prossima settimana alla preparazione di dolcetti e biscotti, e prevedo che non avrò tempo di cucinare altro!!! Se siete a Berlino Sabato 7 Dicembre, mi trovate al mercatino natalizio "A very British Christmas market at St George" dalle 15:00 alle 18:00, Preußenallee 17-19, 14052. Su venite, vi aspetto! I mercatini di Natale tedeschi sono ufficialmente aperti, e se avete in programma di visitare in particolare Berlino, ecco il link con tutti i mercatini presenti in cittá, divisi per zona, con orari e periodo di apertura. Il mio consiglio per girare i mercatini ed essere felici?....Vestitevi caldi caldi caldi...... :) 

Le barchette di zucchine ripiene sono un classico piatto che sono certa ognuno di voi avrá preparato almeno una volta nella vita! Io le ho fatte ripiene di tonno e quinoa e mi sono piaciute tantissimo, modificando leggermente la ricetta presente su questo sito di ricette di cucina

Ingredienti per 6:  
8 zucchine 
una manciata di Pinoli 
1 scatoletta di tonno da 180g 
100g quinoa 
3 filetti di acciughe 
1 cipolla media 
1 uovo grande 
2 cucchiai di capperi 
1 fetta pan carré 
cubetti di provola 
sale, pepe e olio d'oliva q.b 

1. Preriscaldare il forno a 180°C. Lavate e pulite le zucchine con uno spazzolino, poi lessatele in acqua bollente intere, per circa 8-10 minuti. 
2. Preparate la quinoa come indicato sulla confezione, finché i chicchi risulteranno cotti. Scolatela bene. 
3. Mondate e tagliate la cipolla con una mezzaluna e fatela appassire con due cucchiai d’olio, aggiungendo anche le acciughe sminuzzate. 
4. Scolate le zucchine e lasciatele intiepidire un po’. Eliminate le estremità e tagliatele per lungo, poi scavatene la polpa con un cucchiaino ed aggiungetela al soffritto con la cipolla e le acciughe. 
5. Fate cuocere per qualche minuto e quindi tritate tutto insieme al pan carré, il tonno, l'uovo. Poi aggiungete i capperi e la quinoa 
6. Insaporite con pepe e un pizzico di sale (non troppo, perché acciughe e capperi sono già salati). 
7. Disponete le barchette di zucchine in una teglia e riempitele con il composto ottenuto. Condite con un po’ d’olio, i cubetti di provola ed i pinoli. Infornare per 20-30 minuti o finché dorate in superficie.

I wish very much to post this recipe today, because I fear that it will be the last healthy thing I'll eat  for a while! I will dedicate indeed every free minute of the next week to the preparation of cakes and cookies, and I expect that I will not have time to cook anything else! The stuffed zucchini boats are a classic dish that I'm sure each of you have prepared at least once in life! I stuffed them with tuna and quinoa and they were delicious! Give them a try!

Ingredients for 6:
8 zucchini
a handful of pine nuts
1 can of tuna 180g
100g quinoa
3 anchovy fillets
1 medium onion
1 large egg
2 tablespoons capers
1 slice white bread
cubes of provolone cheese
salt, pepper and olive oil q.b

1. Preheat oven to 180°C. Wash and clean the zucchini with a brush, then boil them whole for about 8-10 minutes.
2. Prepare quinoa as directed on package until well cooked. Drain well.
3. Peel and chop the onion and sauté in two tablespoons of olive oil, adding the chopped anchovies.
4. Drain the zucchini and let them cool down a bit. Remove the ends and cut lengthwise, then take the flesh with a spoon and add it to the pan with the onion and anchovies.
5. Cook for a few minutes, then add the bread, tuna and egg and mince everything together with a blender. Then add the capers and quinoa and mix together with a spoon.
6. Season with pepper and a pinch of salt (not too much, because anchovies and capers are already salty).
7. Arrange the zucchini boats in a baking dish and fill with the mixture. Season with drops of olive oil, and sprinkle with cubes of provolone and pine nuts. Bake for 20-30 minutes or until golden on the surface.

  2. Confesso di non aver mai assaggiato la quinoa :-( ma questa tua ricetta è stuzzicante al massimo, anche perchè il tonno a me e mio marito piace tanto.
    magari è la volta buona che provo la quinoa, no? ;-)

  4. Mi piacerebbe tanto visitare i mercatini di natale tedeschi...respirare quella magica atmosfera...assaporare quegli odori e sapori... Chissà, forse un giorno... Per adesso mi gusto questa buonissima ricetta!! Un saluto ed un abbraccio
