Baskets of Caramel and Honey

Strawberries (again)!!! Well, I love strawberries, their scent of spring, their sweetie taste,their  juicy consistency…..and since one of the things I hate the most is peeling, coring and cutting the fruit……well, W the strawberries! 
One thing I discovered living in Germany is the Pick-Your-Own fruit option in the farms, where I grew this was not possible. It is really nice to walk out in the farm's garden picking your own fruits….it is almost like to have your own farm! If visiting Germany you would like to experience it just have a look for "selbst pflücken" web sites and you will find plenty of farms that offer it. In this period the farm's open their fields  to pick up strawberries, in July cherries, in October apples and pears.



The recipe of today is a delicious container. 
The baskets  of caramel  are pretty to serve and you can fill them as you like, the easiest way is to fill them with whipped cream and fresh seasonal fruit. 
This time I filled then with pastry cream and strawberries. I will post the recipe of a delicious pastry cream in the next post.
A perfect after dinner treat.

Ingredients for 6 Baskets

50g unsalted butter
50g brown sugar
2 tablespoons honey
50g plain flour

Filling:
Whipped cream
Strawberries

1) Preheat the oven to 160ºC (fan). Line a baking-tray with non-stick backing paper.
Melt at low temperature in a saucepan the butter with the sugar and the honey mixing with a silicone spatula. Remove from the heat and sift the flower into the mixture, stir energetically with a whisk or a spatula until well combined. Allow the mixture to cool at room temperature for about 10 minutes) until it does not sticks and can be easily removed from the pan with the spatula. At this point it should have a malleable consistency.

2) Make little balls  (for a total of 6 balls) with the mixture (a bit bigger than cherries), well, to be precisely each should be about 26-27g (that's professional deformation!)
 Lay them on the baking-tray. Don't press them. Bake for about 7-8 mins, until crunchy. Remove from oven and allow to cool few minutes. Meantime put in a quite place 6 glass upside-down (scroll down for pictures of the steps)

3) Carefully lift the wafers and put them on the bottom of upside-down glass. Allow to cool very well, then take them and fill with whipped cream and strawberries (or as you wish!). 


Cestini di caramello al miele 



Ancora fragole?!? Ebbene si, adoro le fragole, hanno un profumo, una consistenza ed un sapore fantastici; considerato inoltre che una delle cose che più' odio é sbucciare la frutta…..beh, W le fragole!
Vivendo in Germania ho scoperto la possibilità offerta da moltissime fattorie di raccogliere la frutta fai-da-te. Ossia con un bel cestino da Cappuccetto Rosso (o una cassetta per la frutta, dipende) si può passeggiare tranquillamente per i campi della fattoria raccogliendo la frutta di stagione…..a Giugno le fragole, a Luglio le ciliegie, ad Ottobre mele e pere. E' un modo divertente per trascorrere una giornata all'aria aperta. Se vi trovate in terra teutonica cercate su internet "selbst pflücken"  e troverete gli indirizzi di tante fattorie che offrono questa possibilità.

La ricetta che vi propongo oggi  é un gustoso contenitore. I cestini di caramello sono molto carini e potete riempirli come vi piace, il modo più semplice é con panna montata e frutta. Io questa volta vi ho messo crema pasticciera e fragole. Nel prossimo post vi proporrò una deliziosa ricetta per la crema pasticciera.

Ingredienti per 6 cestini:

50g burro
50g zucchero di canna
2 cucchiai di miele
50g farina

Interno:
Panna montata
Fragole

1) Scaldare il forno a 160ºC ventilato. Rivestire con carta forno una placca da forno. Sciogliere a fuoco basso in un pentolino il burro con lo zucchero ed il miele mescolando con una spatola in silicone finché i componenti sono ben amalgamati. Togliere il pentolino dal fuoco ed unire al composto la farina da un setaccio mescolando bene ed energicamente con la spatola (o una frusta)
Far raffreddare mescolando di tanto in tanto finché il composto solidifica un po' così da non essere più appiccicoso (staccandosi con facilitá dal pentolino). Dopo circa 10 min dovrebbe avere una consistenza malleabile.

2) Formare delle palline (per un totale di 6) poco più' grandi di una ciliegia ed adagiarle sulla placca senza schiacciarle. Beh, per essere precisi ognuna dovrebbe essere circa 26-27g (scusate, deformazione professionale). Cuocerle in forno per circa 7-8 minuti (o finché diventano croccanti). Togliere dal forno e far intiepidire qualche minuto. Nel frattempo posizionare in un luogo tranquillo 6 bicchieri sottosopra.

3) Staccare molto delicatamente le cialde dalla carta forno con l'aiuto di una spatula ed adagiarle sul fondo dei bicchieri. Far raffreddare bene. Staccare i cestini e riempirli con panna montata e fragole a pezzetti (o come vi pare :).


E queste sono le cialde sui bicchieri.

Piccolo aggiornamento. Questi sono i cestini con fragole e panna, preparati all'ultimo momento...hanno riscosso molto successo.

  3. oddiooooo ma sono favolosiiiii...questi li devo proprio provareeeee...ma quei biscottini ...sotto la pana montata e le fregole...ma sono invitantissimi....nononono cuginetta tu ei un genio anke in cucina.....appena vado a casetta nuova li provo..anke perkè si possono fare prima i biscottini e poi condire magari all'ultimo minuto o se ti viene qualcuno all'improvviso....poi mi piace proprio il fatto che ci sono uno...i passaggi e due ke siano stati fatti da te!!!!! brava brava e ancora brava....

    1. le cialde credo si possano conservare per qualche giorno dentro una scatola di latta....ma io le ho sempre mangiate al momento!
